If the section of road is going NW/SE I know I want my building to face NE or SW, so I make sure I am facing SW or NE when placing the building.

A barn close on hand is useful, too. You can align to fields using the compass. Fields always align north/south/east/west exactly. Use the compass to get proper angles and alignment with other buildings. If you don't want animals roaming the village, fence them in. Try to leave some trees here are there, for ambiance.
